Even though Christmas is over, foootball season isn’t. That means more parties to watch the National Championship and the Super Bowl. Or in my case, more opportunity to chat and occasionally look at the TV screen. 🙂 If you are getting together with friends, you may be asked to bring something sweet. I don’t know about you, but I am plum full of cookies and chocolate. This recipe for Pineapple Upside Down cake is a tasty light dessert and is so easy to make.
1 Pkg yellow cake mix (make sure it calls for veg oil ) 1 Pkg instant vanilla pudding 1 8oz can sliced pineapple (save juice)
Prepare cake mix as package directs, except add one more egg and 1/4 cup more water. Melt 1/2 cube butter in 13×9 pan. Sprinkle with 3/4 cup brown sugar. Lay pineapple slices on top of the sugar. Add cake mix. Bake time and temp per package directions.
Heat pineapple juice. Add 1 Tablespoon butter and 1/4 cup powdered sugar. When cake is done remove from the oven, prick with a toothpick, and pour heated juice slowly over the top of the cake. While cake is still hot turn upside down.
