Sour Cream Banana Bread

I’ve tried all different recipes for Banana Bread but I always seem to come back to this one.

The cast of characters.  Fyi, forgot the eggs in this picture.

Cream sugar and shortening together.  Add eggs, vanilla and mashed bananna.

Fold in sour cream.

Sift dry ingredients together and fold into the creamed mixture.

Mix cinnamon and sugar together. Sprinkle the mixture in the bottom of a greased tube or bunt pan.  Add half the batter.

Sprinkle remaining sugar mixture on batter followed by the remaining batter.

Bake for 45 minutes and cool on rack when done.

Sliced when cool.  See the beautiful lines of cinnamon sugar in the middle of the bread?  Recipe also below.

Sour Cream Banana Bread

½ cup shortening ½ cup sour cream
1 cup sugar 2 cups flour
2 eggs 1 tsp baking powder
½ tsp vanilla 1 tsp baking soda
1 cup mashed banana ¼ tsp salt
½ tsp cinnamon ¼ cup sugar
½ cup chopped nuts (opt)

Cream shortening and sugar until fluffy. Beat in eggs, bananas and vanilla. Fold
sour cream. Sift dry ingredients and fold into creamed mixture.

Mix together nuts, ¼ cup sugar and cinnamon. Sprinkle ½ in bottom of well-greased tube pan or Bundt pan. Spoon ½ the batter into pan. Sprinkle remaining nut mixture and add remaining batter. Bake in 350 degree oven for 45 minutes.
