Sunday was a rainy,windy, stay in and watch Hallmark movies and football kind of day. It also was a day I wanted a good dinner, but didn’t want to slave over a stove. So I made Pumpkin Turkey chili in the crockpot. I found the recipe several months ago and set it aside for a day like this.
I had no desire to run to the store for missing ingredients so I improvised. The real recipe is below. I only had yellow peppers and I didn’t have any garlic cloves so instead, I used garlic powder.
1 Tbsp vegetable oil
1 cup chopped onion
1/2 cup chopped green pepper
1/2 cup chopped yellow pepper
1 clove minced garlic
1 1b. ground
1 14.5 can diced tomatoes
2 cups pumpkin puree
1 1/2 Tbsp. chili powder
1/2 tsp. pepper
dash salt
1/2 cup shredded cheese
1/2 cup sour cream
Heat oil in a skillet over medium heat and saute the peppers and onion.
Add ground beef to pepper and onion mixture. Cook until brown.
Put entire mixture in the crockpot. Add the diced tomatoes, pumpkin puree and seasonings. Cook in the crockpot on low for approximately 4-5 hours.
Serve with grated cheese and a dollop of sour cream on top. Add a slice of crusty garlic bread and a glass of wine and it’s the perfect meal for a Fall day.
